Rich & Delicious Cheesecake

1 lb. (2 Cups) small curd cottage cheese
2-8 oz Cream Cheese (leave out 2 hours prior to baking)
1 1/2 Cups Sugar
4 Eggs
1/3 Cup Corn Starch
2 Tablespoons Lemon Juice
1 Teaspoon Vanilla
1/2 Cup Melted Butter (1 stick)
1 Pint Sour Cream
1 Box finely crushed Graham Crackers


Place cottage cheese in a blender and smooth completely.

Smooth until there are no lumps. In a large mixing bowl, mix cream cheese and sugar until completely blended.

Add the cottage cheese and mix. Slowly mix in eggs, corn starch, lemon juice, vanilla, butter, and sour cream.

Grease pop out pan with Crisco. Place desired amount of finely crushed graham crackers into the pop out pan.

Use the back of a spoon; push down on the graham crackers to make a crust. Bake at 325 F for 1 hour and 10 minutes.

***Keeping the cheesecake in the oven, TURN OFF THE OVEN and leave in for 2 hours. For best results bake the day before.
