Twice Baked Potatoes

4 large potatoes
3 Tablespoons butter
1/2 Cup Sour Cream
Chives, finely chopped
1/2 Cup Cheddar Cheese
4 Slices of Bacon (Chopped - Optional)
Salt and Pepper


  1. Preheat oven to 400 degrees
  2. Bake Potatoes until cooked thoroughly
  3. Remove from oven and turn heat down to 375 degrees
  4. Cut the potatoes in half.
  5. Carefully scoop out the inside into a large bowl, being careful not to break the skins
  6. Mash the potatoes with the butter and sour cream
  7. Stir in the bacon, chives, salt and pepper
  8. Scoop the filling back into the potato skin and sprinkle cheese on top
  9. Return to oven on a cookie sheet for approximately 20 minutes - they will get crusty on the outside and the cheese will melt
  10. Serve immediately and enjoy!
